Tapai or Tape is a traditionally fermented rice dish for Timorese, which is sweet and tangy in taste and little alcoholic. Basically, it is a traditional fermented cuisine made from rice, yeast and water. Preparation is easy as rice is washed, cooked in water, mix with yeast (ragi tapai) evenly and ferment for few days.
