Choosing of Whole Durian Fruit
1. Examine the quality of stem or stalk. Stems lose moisture as it ages. So, a big, solid stem indicate freshness of durian.
2. Shake the durians and listen for the sound of seeds moving within. Sound is a sign of durian ripening stage. If no sound, durian is too ripe and vice versa.
3. Smell durians. If no smell detected, the fruit are normally unripe.
